2. Dan Pepperell
One of Sydney's most promising chefs (fomerly of stellar places like Oscillate Wildly, Tetsuya's and other Sydney luminaries) has returned from a stint in New York at Momofuku Ssam Bar and is now holed up at Paddington's 10 William Street. The focus of much industry buzz, we hear good things going on over there. And as tips go, follow the hospo crowd and you generally won't be steered wrong.

Not that stuff out of a jar. The fresh stuff in root form is a massive punch in the face and is in season right now. Buy it when you want to use it and store it whole - cutting it grating it begins the enzyme reaction that causes its dynamite mustardy power and flavour. Try it freshly grated on a steak (or...on a cheeseburger).
